Easy Oven-Roasted Roma Tomato Sauce

Version 1Current

Version 1 · Sep 26, 2026

What changed,
and why.

Converted the family discussion into a usable small-batch recipe while preserving the original oven-roasting method and clearly identifying added quantities and procedural details as completions.

All history

A simple, low-stirring method that roasts Roma tomatoes on a sheet pan for efficient evaporation, lightly caramelized flavor, and easy skin removal.

Halved Roma tomatoes are roasted cut-side up with olive oil and salt until slumped and caramelized at the edges. Roasting provides broad surface area for evaporation and avoids the scorching risk of reducing sauce in a deep pot. After roasting, remove the skins by hand or process the tomatoes through a food mill, then blend to the desired texture. This is a flexible fresh or freezer sauce, not a tested canning formula.

Ingredients

About 3 cups sauce, depending on tomato moisture and reduction

Method

  1. Prepare the oven and pan

Heat the oven to 400°F (205°C). Arrange the halved Roma tomatoes cut-side up in a single layer on a rimmed sheet pan.

  2. Season

Drizzle the tomatoes with olive oil and sprinkle them with salt.

  3. Roast

Roast for 45–60 minutes, until the tomatoes are slumped, their liquid has reduced, and the edges are beginning to caramelize.

  4. Remove skins and seeds as desired

Let the tomatoes cool enough to handle. Pull off the loosened skins with your fingers, or pass everything through a food mill to remove both skins and seeds.

  5. Finish the sauce

Blend or mash the roasted tomatoes to the desired consistency. Taste and adjust the salt. For a thicker sauce, return it to a wide pan or roasting vessel and cook until it reaches the preferred consistency.

Safety & handling

  • This recipe has not been developed or validated for shelf-stable canning. Refrigerate promptly for short-term use, freeze for longer storage, or use a laboratory-tested tomato-sauce canning recipe with its specified acidification and processing method.

Insider tips

  • A sheet pan speeds reduction by maximizing evaporation and requires little stirring.
  • Roma tomatoes are especially suitable because their thick flesh, relatively low water content, and limited seeds concentrate efficiently.
  • For larger batches, briefly soften quartered tomatoes in a wide skillet or roaster, remove skins and seeds with a food mill, and reduce the purée in the same wide vessel.
  • A wide vessel reduces sauce faster than a deep stockpot and makes scorching less likely, though the sauce should still be monitored.

Family notes

  • Heather asked for the easiest and most effective way to begin cooking down Roma tomatoes for sauce.
  • The family source favored oven roasting over stovetop reduction for its ease, evaporation, and roasted depth.
Sources & what was completed

Record provenanceWilliams family historical source + clearly separated usability completion

Completed for usability
  • The family source supplied the tomatoes, olive oil, salt, 400°F roasting temperature, approximate 45–60 minute roasting time, skin-removal options, and wide-vessel guidance.
  • Ingredient quantities, estimated yield, cooling guidance, seasoning adjustment, and the organized step sequence were added as ordinary usability completions; they are not represented as family-tested details.
