Silver Slicer cucumbers have thin, tender skin, so this method avoids heat and relies on small fruit, blossom-end trimming, an ice bath, cold brine and optional calcium chloride for crunch. The restrained vinegar keeps the flavor fresher and less sour than conventional refrigerator pickles. These pickles must remain refrigerated and are not suitable for shelf-stable canning.

Method
Prepare the cucumbers
Wash the cucumbers thoroughly. Remove about 1/16 inch from each blossom end, where softening enzymes are concentrated. Leave whole if small or cut into halves or spears.
Chill for crunch
Soak the prepared cucumbers in ice water for 1 to 2 hours, then drain well.
Make the cold brine
Stir the cold water, 5% vinegar, salt and optional sugar together until dissolved. Do not heat the brine.
Pack the jars
Divide the garlic, dill, mustard seed, peppercorns, red pepper, optional calcium chloride and optional tannin leaves between two clean quart jars. Pack in the cucumbers without crushing them.
Add the brine
Pour in enough cold brine to cover the cucumbers completely, leaving about 1/2 inch of headspace. Keep the cucumbers beneath the brine with a clean refrigerator-pickle weight if necessary.
Refrigerate
Close the jars and refrigerate immediately. Let the flavor develop for at least 24 hours; taste again after 3 days and continue chilling until the seasoning suits the household.
Serve and monitor
Keep the pickles cold between servings and use clean utensils. Because this is a lightly acidified refrigerator preparation, make small batches and use promptly.
Safety & handling
- This is a refrigerator pickle, not a tested canning formula. Do not store it at room temperature or treat it as shelf stable.
- Use vinegar labeled 5% acidity and keep the jars continuously refrigerated at 40°F/4°C or colder.
- This low-vinegar recipe has not been laboratory validated for a specific storage life; prepare a small batch and use it promptly.
- Discard the contents without tasting if you observe mold, slime, unexpected bubbling, a bulging lid or an objectionable odor.
- Only use tannin leaves that are positively identified, clean, unsprayed and known to be suitable for food use.
Insider tips
- For the best texture, harvest Silver Slicer cucumbers small; the seed cavity of a full-size fruit is likely to soften first.
- Cold brine preserves the fresh cucumber character and raw-garlic bite associated with Heather’s preferred Claussen-style flavor.
- Blossom-end trimming, an ice bath and calcium chloride are the primary texture controls; the tannin leaf is optional backup.
- Do not pour hot brine over Silver Slicer cucumbers or process these jars in a water bath if the goal is a crisp refrigerator pickle.
- Dry dill umbels are an excellent use for garden dill that has already gone to seed.
- The family discussion also explored a vinegar-free lacto-fermented version, but that produces a rounder, funkier and sometimes effervescent flavor rather than a close Claussen-style result.
Family notes
- Heather requested a best-ever refrigerator pickle for crunchy Silver Slicer cucumbers and specifically prefers Claussen flavor.
- The desired flavor is fresh, salty and garlicky rather than strongly sour.
- The source discussion favored an unheated method and reduced vinegar compared with a conventional refrigerator-pickle brine.
- A mullein leaf previously used by the family as a tannin source was suggested as an optional texture aid.
- No completed family batch or tasting result was recorded.
